Ingredients1 large cucumber, thinkly sliced1 medium red bell pepper, cut into 1/2 strips 1 medium red bell pepper, thinkly sliced 1/2 cup balsamic vinegar 1 tsp olvice oil 4 sugar substitute sweetener packets salt and black pepper to taste DirectionsCombine vinegar, oil and sweetener with 1 cp of water. Place cut vegetables in a bowl, coat with the marinade, cover and let sit overnight.
